How many cores tasks BOINC really runs in parallel? How many memory used? Is there any messages like warnings present in log?
Probably (I'm not sure) current version BOINC client used only 64(?) cores by default and not more. If you see that there is enough memory for computing on all cores, but used only 64(?), you can make cc_config.xml file in your BOINC binaries directory with contents like this:

<cc_config>
   <options>
      <ncpus>72</ncpus>
   </options>
</cc_config>

and restart BOINC. (If I understand right, you machine supports up to 72 threads).
